Le parcours de Pascal Daoust est un exemple de détermination et de passion. Après avoir eu de gros problèmes de santé à un plus jeune âge, Pascal a eu de la difficulté à terminer ses études. Suite à une opportunité d'aller passer quelques mois en France, c'est dans les vieux pays qu'il eu la piqûre pour le chocolat. Lors de ce séjour, il eût l'occasion de découvrir les pâtisseries et surtout le chocolat pendant 8 mois. À son retour, il fit un DEP en pâtisserie (la formation de chocolatier n'étant pas donnée au Québec). Ensuite, il perfectionna son art pendant 3 ans dans une chocolaterie à Montréal, tout en vendant des produits à son compte par catalogue.
