Lors de ce séjour, il eût l'occasion de découvrir les pâtisseries et surtout le chocolat pendant 8 mois. À son retour, il fit un DEP en pâtisserie (la formation de chocolatier n'étant pas donnée au Québec). Ensuite, il perfectionna son art pendant 3 ans dans une chocolaterie à Montréal, tout en vendant des produits à son compte par catalogue.
