Le parcours de Pascal Daoust est un exemple de détermination et de passion. Après avoir eu de gros problèmes de santé à un plus jeune âge, Pascal a eu de la difficulté à terminer ses études. À son retour, il fit un DEP en pâtisserie (la formation de chocolatier n'étant pas donnée au Québec). Ensuite, il perfectionna son art pendant 3 ans dans une chocolaterie à Montréal, tout en vendant des produits à son compte par catalogue.
