En 1945, la famille de Marcel Besson (père) ouvre un magasin général à Sainte-Jeanne-D'Arc offrant un service d'abattoir et de comptoir de détail sous les conseils du grand-père, Louis Besson, lui-même charcutier français. En 1958, le magasin est détruit par le feu. L'année suivante, Claude Besson (fils) et son épouse, Lucie Boily, inaugurent une boucherie à Dolbeau sous le nom de «Marché Besson». Puis, en 1968, ils achètent l'actuel commerce qui était, jadis, un abattoir. Par la suite en 1978, M. Besson crée avec son épouse, ses trois fils et sa fille, les divisions Salaison Besson et Salon de la viande (abandon de l'abattoir). Les activités de charcuterie prennent alors tout la place. Aujourd'hui, la 5e génération a commencé à y travailler et compte entre 50 et 60 employés. Salaison Besson Enr is a popular restaurant and supplier of local products in Dolbeau-Mistassini.
