Le projet de la boucherie est d'abord né de la passion de Philippe Desjardins, propriétaire, pour la viande et ses produits dérivés. M. Desjardins est producteur de porc et s'est lancé en affaire pour faire la promotion de sa ferme porcine comprenant 125 truies, 400 porcelets en pouponnière et un engraissement de 800 porcs.
